Good Eats

Corned beef and cabbage - dinner of champions. Tonight was my turn to bring the main dish to small group and did I ever! Everyone wanted to know my recipe, but there really isn't one. I'm in the mood to share, so here goes:

One corned beef
One head of cabbage
5 or 6 potatoes
One bag baby carrots
One or two onions
Garlic powder
Peppercorns

Put the corned beef in a big ol' pot with a lid, or in your crock pot. Pour the seasonings in which come with it. Cut the cabbage and onions into quarters and drop in. Scrub then quarter the potatoes and drop them in. Empty the bag of carrots over that. Shake on some garlic powder and peppercorns. Add about 2 cups of water. Cover the whole thing and place in a 250 degree oven for about 8 hours (I start it at breakfast). Or cook in the crock pot on high for an three or four hours, then drop to low for several more, till dinner. Yum. Good stuff.

My kids like it served with yellow mustard and butter. I like it just the way it is. Enjoy.
