Corned Beef and Cabbage

By request, I bring you the corned beef and cabbage recipe. Such as it is. Unfortunately, I cook by the Force, not recipes, so good luck. The picture is what was left after the vultures got to it, so it doesn't look so great. Sorry. The meat is their favorite, obviously.



1 corned beef (these are found in the beef section of the grocery, pre-packaged in their own brine and a seasoning packet)
1 head cabbage
2 onions (I like sweet or Vidalia)
5 or 6 little potatoes - these are little yellow Yukons, but we're partial to new reds - quantity depends on how many are eating with you
1 bag of baby carrots - I didn't have any today, but they add a nice touch of color and I like them
garlic powder
peppercorns
oregano

Start this in the morning.

Open the beef and drop it into your crock pot - will need a larger style crock for this - including the brine. Sprinkle season packet on meat. Cut cabbage into quarters, then halve each quarter and drop in on top of meat. Rinse small potatoes and drop in, or rinse and quarter larger potatoes. I've even used sweet potatoes. Yum! Peel and quarter onions and drop in. Dump in baby carrots. Sprinkle some peppercorns, garlic powder and oregano over all. Pour in about a cup and a half of water and cover.

I like to cook this on high for about an hour, which means I start this as soon as I get up, letting it cook while the kids get ready for school, and I shower and dress. After about an hour, I turn it down to low. Sometime early afternoon I'll usually turn it to warm till dinner. Then use a large slotted spoon to dish it all out. Serve with butter and yellow or dijon mustard on the side.

St. Patrick's Day is what? Monday? So this should all be on sale. Give it a shot! Enjoy!
